Toronto Just Got a New Cocktail Bar So Good It Might Make You Forget About Every Other One in the City

Toronto’s cocktail scene has been on a genuine upswing for years, producing bars with international recognition and menus that can hold their own against the best in New York or London. But every so often, a new spot arrives that manages to cut through the noise with something so focused and so well-executed that it immediately earns its place among the city’s essential destinations. The Virginia, on Queen West in Parkdale, is exactly that kind of bar.

The space itself sets the tone perfectly. Exposed brick walls, a long hardwood bar, and intimate candlelit tables for two create an atmosphere that is simultaneously stripped back and genuinely inviting — the kind of room that makes you want to linger, slow down, and actually taste what’s in your glass.

The Virginia took over the address previously occupied by Dipped Donuts when it closed its Parkdale location in late 2025. The space — with its identifiable arched window and prime positioning between Brock and Lansdowne — feels tailor-made for what The Virginia has become.

The opening menu offers ten carefully considered cocktails, ranging from a refined Dark and Stormy riff featuring Havana Club rum, ginger, lime, and bitters, to the nutty and fruity Jack Rose, made with apple brandy, pomegranate, strawberry, and lemon. Each drink is a complete thought — no unnecessary flourishes, just quality ingredients and skilled execution.

If you’re a fan of cocktail bars that let the drinks do the talking, The Virginia belongs at the top of your list. Head to Queen West, find the arched window, and pull up a stool — this one is worth your evening.
