Fat Zhu Noodle Lab: Six Seats, One Wonton Master, Zero Compromises<\/strong><\/p>\n

Scoring a table at Wonton Hut, Toronto’s most beloved wonton spot, is already a challenge on a good night. Chef Eddie Yeung has just made it considerably harder \u2014 but for a genuinely interesting reason.<\/p>

Fat Zhu Noodle Lab, Yeung’s new North York offshoot, has officially opened at 1 Byng Ave. with just six counter seats and a menu stripped down to almost nothing but the essentials: house-made black tiger shrimp wontons, slow-braised beef brisket and tendon, two styles of slow-simmered broth (a 10-hour master broth and a spicier typhoon shelter version), and two noodle options \u2014 egg and rice \u2014 sourced from a local noodle master. It’s less a restaurant in the conventional sense than a chef’s table experience, built around watching the technique up close rather than working through a sprawling menu.<\/p>\n

The concept grew directly out of a hard lesson from Yeung’s Queen West Wonton Hut location, which closed in August 2025 after what he describes as a genuinely worthwhile but exhausting run. His flagship Wonton Hut in Unionville, still going strong after 16 years, never had the same problem \u2014 it’s the second, bigger location that taught him something about scale. As he put it, a large space costs too much in rent, needs too many staff, and generates too much wasted food. Rather than try to fix those problems by growing further, Yeung went the opposite direction entirely.<\/p>

“I knew I wanted a new concept that stripped away the noise of a regular restaurant so I could focus 100 per cent on the food,” Yeung told blogTO. The six-seat format isn’t a marketing gimmick so much as a genuine operating philosophy: with a space this small, there’s essentially zero food waste, fast table turnover, and tight control over quality at every step. It also happens to mirror something closer to the real dining experience Yeung grew up with \u2014 communal Hong Kong-style table sharing, with diners seated right up against an open kitchen, watching each bowl assembled in real time.<\/p>\n

“We aren’t trying to please everyone,” Yeung said. “But if you crave a world-class wonton or perfect brisket, we built this place so you know exactly where to go.”<\/p>\n

The tradeoff is obvious: with only six seats total, reservations are about as scarce as they come, and the format leaves little room for walk-ins or spontaneity. But for diners who’ve long admired Wonton Hut’s reputation from a distance \u2014 or logged one too many nights on its waitlist \u2014 Fat Zhu offers a genuinely different way into the same culinary point of view, just distilled down to its most essential form.<\/p>\n","protected":false},"excerpt":{"rendered":"
